Our chocolate bits, chips, and chunks contain a minimum of 60% cocoa processed by an American company dedicated to cutting-edge technology and artisan techniques. We use "Cocoa Rouge", a much sought after red Dutch process cocoa favored by fine pastry chefs for its rich deep red color , robust fudge-like flavor and full chocolate essence. Its bittersweet character intensifies the flavor of our Dark Chocolate with Fleur de Sel.

And speaking of Fleur de Sel ... What is it? Fleur de Sel ("Flower of salt" in French) is a hand-harvested sea salt collected by workers who scrape only the top layer of salt before it sinks to the bottom of large salt pans. Traditional French fleur de sel is collexted off the coast of Brittany. We use it as a finishing salt and combined with our dark chocolate it is a sweet/salty experience that will make your eyes roll to the back of your head. Few things are that delicious.

Channing Pollock, the playwright and critic has been quoted as saying "No man in the world has more courage than the man who can stop after eating one nut." Our question is why would you want to? Then, of course, there's the fact that one of the most unexpected nutritional discoveries of the 1990s was that the frequent eating of nuts appears to dramatically improve health. In particular, nut-eating greatly lowers the risk of heart disease. Our cookies are chock full of Walnuts, Macadamia nuts and Pistachios, the nutty flavors of the world. So I guess we could say that regularly eating Cookie Daddy Cookies is really good for your heart!

It's hard to make a cookie without vanilla and fine bakers know the world's finest and most consistent vanilla comes from Madagascar. The Madagascar Bourbon Pure Vanilla we use has a creamy, sweet, velvety flavor that is perfectly suited for baked goods. The ginger in our Ginger and Macadamia Cookie is nothing short of a marvel. After harvesting baby ginger, (the most tender kind,) the root is diced, then steeped in large vats filled with simmering raw cane syrup. After seeping for several days, the ginger is allowed to crystallize into delicious nuggets at which time it jumps into our cookies where it happily keeps our macadamia nuts company until the cookies land in your kitchen waiting for you to enjoy them!

Nearly every baking recipe you read, when it calls for coconut, calls for shredded coconut. Of course we do something different. We use flake coconut. It provides greater surface area and as a result, more coconut flavor. How else could we put decadance in every bite?

How often do you see a reference to Lime Oil? Not often, I guarantee. We created and extraordinary experience in our Pistachio Lime Cookie by doing two things. First we used Lime Oil, which is pure natural essence, cold processed from the rind of the fruit. Because it is pure essence, it is remarkably intense. It takes approximately 400 limes to fill a 5 ounce bottle with lime oil. It's a precious ingredient, but well worth the price.
The second thing we do is use Lime Zest from the finest, freshest limes available. The process of freezing our cookies intensifies the flavor of the lime zest so when the cookies are thawed, the end product is a cookie with glorious "limyness" offset by the nutty flavor of salty pistachios. Yum!

After years of taste testing many, many kinds of eggs, we landed on Eggland's Best and now we won't use anything else. It all starts with Eggland's Best hen feed. The superior feed contains no animal fat, no animal by-products and no recycled or processed food. The hen feed contains no hormones, steroids, of antibiotics of any kind. These fine eggs contain ten times more Vitamin E than ordinary eggs, 100mg of Omega 3, which is beneficial to cardiac health, 25% less Saturated Fat and 200 mcg of Lutien, shown to contribute to eye health. It's surprising what a difference a really fresh, health- filled egg can make in the flavor of a cookie.
